Nora's PORK BASE
This is my Mom's Pork base, which she uses for so many of her main dishes. And like all of her dishes, Mom NEVER has set measurements for her ingredients. This pork base is something that is adjusted to taste. This can provide an easy beginning for many of her main dishes with just adding different vegtables. (eg. string beans, zuchinni, squash, caulliflower, split pea soup, seaweed soup, lumpia, etc.)

INGREDIENTS:
• garlic
• onions
• soy sauce
• pork
• cooking oil
• salt

PREPARATION:
I find it easier to prep everything before starting to cook. Mince garlic and onions, chop pork into bite size pieces (for lumpia cut in small sizes). Heat oil in pan at medium level. Sweat onions and garlic till translucent. Raise heat to high and add pork stirring till pinkness is gone. Add soy sauce and salt stirring constantly browning pork.

String Beans
INGREDIENTS
• string beans
• 1 or 2 tomatoes
• water

Prep string beans by trimming edges off and cutting in bites size pieces. Cut tomatoes in quarters and add to base. Stirring till thoroughly broken down add small amount of water if necessary. Tomatoes will cause sauce to thicken slightly add around 2 cups of water. When water comes to a boil reduce temp to medium and let simmer for approximately 20-40 minutes adding water if needed. When pork is tender add string beans for 10 min or until desired tenderness.This pork base is the beginning of many dishes, experiment and enjoy. Please share with us your favorite experiments.
